OMG Paleo Chocolate Chip Cookies!!!

Well everyone I have discovered the best Paleo Chocolate Chip Cookie recipe ever!!! I’m sure others have as well but I have to share this recipe. Not only do they taste like the original cookies, no I think better, they turned out! No cookies turn out in my oven but these did! That in itself is awesome!

• 1/4 cup palm shortening (I used organic unsalted butter because I had no palm shortening)
• 1/4 cup coconut palm sugar (I used coconut crystals)
• 2 tablespoons honey
• 1 large egg, room temperature
• 2 teaspoons vanilla
• 1½ cups blanched almond flour (I used Trader Joe’s Almond Meal)
• 2 tablespoons coconut flour
• ½ teaspoon baking soda
• ½ teaspoon sea salt
• ½ cup dark chocolate pieces

Here’s what you do:

Preheat oven to 350 degrees F.
With a hand mixer combine palm shortening or organic butter, coconut sugar or crystals, honey, egg, and vanilla for about 15 seconds until smooth and fluffy or combined.
Add the almond flour, coconut flour, baking soda and sea salt and mix again until combined, about 30 seconds. Scrape down the sides of the bowl if needed in order to incorporate all of the flour. Pulse once or twice more.
Stir in the chocolate chips by hand.
Place golf-ball sized balls of dough on a cookie sheet lined with parchment. Flatten them slightly with your fingers or the palm or your hand or a spatula. The cookies don’t spread much so create the size and thickness you want prior to baking them.
Bake for 9-12 minutes, until slightly golden around the edges.
*These keep best in an air-tight container in the fridge.

I got this recipe from Against All Grain. You will love them! You’ll see I changed a few things because I didn’t have one ingredient or something slightly different but they still turned out amazing!

I dare you try them…you’ll never make any other type of chocolate chip cookies! Especially when these are the healthiest version you can get and they taste the same if not better!
